Tasty, protein-packed snack balls reminiscent of chocolate glazed munchkins.

RAW CHCOLATE GLAZED PROTEIN BALLS

Ingredients:

  • 1/2 cup macadamia nuts (soaked in water for 2-3 hours, drained, and rinsed)

  • 1/4 cup pitted dates, softened

  • 1/4 cup almond butter

  • 2 scoops chocolate plant-based protein

  • 3 tablespoons coconut flour

  • 2 tablespoons cacao powder

  • 4-5 tablespoons water

  • pinch of salt

  

Glaze:

  • 1 tablespoon coconut oil

  • 1/2 tablespoon maple syrup

  • pinch of vanilla bean powder

 

Directions:​​

  1. Blend macadamia nuts in a food processor until a flour forms.

  2. Add the rest of the ingredients and blend until combined. Start with 4 tablespoons of water and add another tablespoon if the dough doesn't stick together between your fingers.

  3. Roll into balls and place in the freezer to firm.

  4. Melt the coconut oil in a small saucepan over low heat. Stir in maple syrup and vanilla bean powder.

  5. Coat each ball evenly with the glaze and place in the freezer to harden. Repeat the process with the leftover glaze.

  6. Store in the fridge or freezer.
