Ooey, gooey, melt-in-your mouth banana tahini bars covered in chocolate chips, coconut flakes, and a layer of fudgy, fruity chocolate. Gluten-free, nut-free, and vegan.
CHOCOLATE-COVERED BANANA TAHINI BARS
Ingredients:
Banana Tahini Bars

1 ripe banana, mashed

3/4 cup creamy tahini

1/2 cup gluten-free rolled oats

1/2 cup raw sunflower seeds

1/4 cup coconut oil, softened

1/4 cup maple syrup
-
3 tablespoons ground flaxseed

1 teaspoon baking powder
-
1/4 teaspoon salt
-
1/3 cup + 2 tablespoons chocolate chips, divided

1/4 cup unsweetened coconut flakes
Chocolate Banana Topping

1 ripe banana
-
2 tablespoons cacao powder

1 tablespoon creamy tahini
-
1 teaspoon maple syrup
Directions:

Preheat oven to 350 degrees Fahrenheit and line a 8" x 8" baking pan with parchment paper.

Add the oats and sunflower seeds to a food processor and blend into a flour.

Add the rest of the ingredients (except for chocolate chips) and blend until combined.

Fold in the chocolate chips. Pour evenly into the baking pan.

Blend the chocolate topping ingredients in the food processor and spread on top of the batter.

Top with more chocolate chips and coconut flakes.

Bake for 23-25 minutes or until a toothpick comes out clean. They will continue to firm up after removing from the oven.

Let cool completely and cut into squares.
