Creamy Broccoli Purée

Ingredients:

  • 5-6 large heads of broccoli, rinsed and cut into large pieces

  • 1/2 cup to 3/4 cup water

  • salt to taste

  

Directions:​​

  1. Bring a large pot of water to a boil with a pinch of salt.

  2. Add the broccoli and cook until fork tender, around 8-10 minutes. Once cooked, do not discard the water it was cooked in.

  3. Transfer the broccoli to your blender. Add a 1/2 cup of the boiled broccoli water to the blender.

  4. Pulse the broccoli and water together until the broccoli breaks into smaller pieces, then blend on high until smooth.

  5. If needed, add more water  to reach desired consistency. Add salt to taste.

Pair it with a simple grilled salmon, use it as a dip for your favorite crackers, or spread it on toast! By thinning it with a little extra water, it also makes the perfect standalone soup.
