
Creamy Broccoli Purée
Ingredients:
- 
5-6 large heads of broccoli, rinsed and cut into large pieces
 - 
1/2 cup to 3/4 cup water
 - 
salt to taste
 
Directions:
- 
Bring a large pot of water to a boil with a pinch of salt.
 - 
Add the broccoli and cook until fork tender, around 8-10 minutes. Once cooked, do not discard the water it was cooked in.
 - 
Transfer the broccoli to your blender. Add a 1/2 cup of the boiled broccoli water to the blender.
 - 
Pulse the broccoli and water together until the broccoli breaks into smaller pieces, then blend on high until smooth.
 - 
If needed, add more water to reach desired consistency. Add salt to taste.
 
Pair it with a simple grilled salmon, use it as a dip for your favorite crackers, or spread it on toast! By thinning it with a little extra water, it also makes the perfect standalone soup.
