AIR-FRIED CARROT FRIES

Ingredients:

  • 1 lb carrots

  • 1 tablespoon melted coconut oil

  • pinch of salt

 

Directions:

  1. Bring a large pot of water to a boil.

  2. Peel and rinse the carrots. Cut into 1/2 inch sticks.

  3. Drop the carrots into the boiling water for 2-3 minutes. Immediately drain the boiling water and transfer to ice water.

  4. Drain and pat dry. Toss in coconut oil and salt.

  5. Place in an air fryer basket and cook for 14-16 minutes at 400 degrees Fahrenheit.

  6. Serve with ketchup or your condiment of choice.

A healthy sidekick to any dinner dish!
